Coconut Rice

Rice is a simple and easily digested food. Brown or multigrain rice will work, but jasmine or basmati rice work best because their light perfumed flavor compliments the coconut milk without overpowering it.

Ingredients:

  • 1 cup jasmine or basmati rice
  • 2 cups light coconut milk or coconut water
  • 2 tablespoons mint,chiffonade
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Steps/Methods:

Add salt, pepper and coconut milk to a 2-3 quart saucepan, bring to a boil and add rice. Cook for 1 minute on a rapid boil. Then lower stovetop temperature to medium low heat and cook for 18-20 minutes.

Feel free to stir intermittently in case you feel that your burners heat is a bit inconsistent. Once cooked mix mint and serve.
