Healthy Home Made Fruit Leather

Sometimes we get so excited by all the fresh fruit available during the summer that we end up with a bit too much. Whether it's strawberry picking with the family or straight from the supermarket, we've got the perfect solution for the extra fruit in your life-DIY fruit leather! Kid-friendly and Scary Seven-free, this portable snack will even keep in the freezer until school starts up again.

Ingredients:

3 cups fruit washed and cut (try berries, apples, pears, mango, grape, or a combination of two or more!)
2-4 Tbsp honey, to taste (the riper the fruit is, the less honey you'll need)
2 lemons, juiced
2-4 Tbsp of water (as needed)

Combine fruit, honey, lemon, and water in a large saucepan and bring to a simmer. Cook covered for 10-15 minutes on low heat. Let cool and blend or mash until smooth. Line a baking sheet with unbleached parchment paper and spread the mixture evenly. Bake at 140 for 3-5 hours, until not sticky to the touch. Let it cool and then cut and roll.
