By adding these little hemp seeds to an already nutritious recipe you end up with a vegan, grain-free, gluten-free dish loaded with protein, omega 3 fatty acids and fiber. A real winner.
Ingredients:
1 cup fresh flat-leaf parsley, chopped
1/2 cup fresh mint leaves, chopped
3 green onions, chopped
1 cup cherry tomatoes, cut in half
1 cup hemp seeds
1 small clove of garlic, chopped
2 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon sea salt
Directions:
Place chopped herbs and green onions in a serving bowl. Add tomatoes and hemp seeds. In a small bowl, mix garlic, olive oil, lemon juice and sea salt together. Pour over salad and serve.
