Homemade Cherry Cashew Ice Cream

There is something to be said for making your own ice cream. Conventional ice cream is often loaded with sugar and artificial flavors and colors. But you are going to love this simple ice cream recipe with all natural ingredients plus it is dairy free!

Ingredients:

For the Cups:

3/4 cup raw cashews

1 tsp agave syrup or honey

1 tsp vanilla extract

Pinch of pink salt

2 tsps fresh lemon juice

1 tsp coconut

For the Ice Cream:

1/2 cup raw cashews

3 tsps Barlean's coconut oil melted

2 tsps lemon juice

2 tsps vanila powder

Pink of pink salt

2 tsps water

1 tsp agave

1 cup cherries

Always soak the cashews overnight to remove impurities and improve their consistency for the ice cream.

For the Cups: Use a blender to crush the cashews until they are a consistency like flour. Add the wet ingredients to the dry until you have a moist dough. Place in a lined muffin tin and form the cups with your fingers.

For the Ice Cream: Blend the cashews in a blender. Add lemon juice, melted coconut oil, vanilla powder and agave syrup and blend again. If the consistency is too dry add water. Once all the ingredients are well blended add the frozen cherries. Scoop into cups and serve.

Topping ideas: sliced mango, oats, cacao nibs, or coconut flakes.
