Rainbow Quinoa Massaged Kale Salad
Ingredients
1 cup rainbow quinoa, cooked
1 bunch kale, stems removed
1 carrot, shredded
1/2 cup snap peas
extra virgin olive oil
1 lemon
1 tbsp dijon mustard
1/2 tbsp honey
flax seeds
Directions
Drizzle chopped kale with olive oil and massage until evenly coated. Set aside 5-10 minutes while you prepare the rest of the ingredients. Toss with quinoa, carrots, and peas. Mix together the juice of the lemon, mustard, honey, and more olive oil, adjusting to taste. Drizzle over salad and top with flax seeds.
Bright Berry Massaged Kale Salad
Ingredients
1 bunch kale, stems removed
1/4 cup strawberries, halved
1/4 cup blueberries
1/4 cup slivered almonds
feta cheese
extra virgin olive oil
balsamic vinegar
honey
Directions
Drizzle chopped kale with olive oil and massage until evenly coated. Set aside 5-10 minutes while you prepare the rest of the ingredients. Toss with berries, almonds, and cheese. Mix together 3 parts oil, 1 part vinegar, and honey to taste. Drizzle over salad.
