Serves 2 to 4

Ingredients

Salad:

1/2 bunch kale, de-stemmed and torn into bite-size pieces

1 carrot, grated

1 small beet, grated

1/2 cup pea shoots

1/2 cup toasted sunflower seeds

Dressing:

1/2 cup olive oil

1/4 cup rice wine vinegar

1 tablespoon mirin

1 tablespoon raw honey

1 tablespoon ginger, minced

1 clove garlic, minced

Directions

Combine dressing ingredients in a Mason jar and set aside. Place salad ingredients in a bowl. Pour dressing over salad and toss well.
