Ingredients:

For the Lemon Yogurt Marinade:

  • 1 cup plain yogurt

  • 4 haddock filets (about 6-8 ounces each)

Instructions:

1. Prepare the Lemon Yogurt Marinade:

In a mixing bowl, combine the plain yogurt, lemon zest, lemon juice, minced garlic, olive oil, dried oregano, salt, and pepper. Mix everything well until you have a smooth and creamy marinade.

2. Marinate the Haddock Filets:

Place the haddock filets in a shallow dish or a resealable plastic bag. Pour the lemon yogurt marinade over the fish, making sure each filet is well coated. Seal the bag (if using) or cover the dish with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours. The longer you marinate, the more flavorful the fish will be.

3. Preheat the Oven:

Preheat your oven to 375°F (190°C).

4. Prepare the Baking Dish:

Drizzle 2 tablespoons of olive oil into a baking dish large enough to hold the haddock filets in a single layer. Use a pastry brush or your fingers to evenly distribute the oil.

5. Season the Fish:

Remove the marinated haddock filets from the refrigerator. Season them with a bit more salt and pepper, if desired.

6. Bake the Haddock:

Place the haddock filets in the prepared baking dish. Bake in the preheated oven for about 15-20 minutes or until the fish flakes easily with a fork and has a golden-brown crust on top.
