Cut the lemons into dice. Put into a jug with the sugar.

Pour on boiling water and leave for 15 – 30 minutes until strong without becoming bitter.

Strain.

Put mint into the serving jug with ice and slices of fresh lemon an hour before serving.

Makes 6-8 glasses

1 sprig mint

ice

lemon slices ( to garnish)
