Lentil-Tomato Soup

Served hot or cold this simple soup is high in fiber. A delicious and easy way to use lentils, a true super food!

Ingredients:

  • 1 cup cooked lentils
  • 1 cup tomato sauce
  • 1/2 cup red peppers, diced
  • 1 tablespoon olive oil
  • 1 clove garlic, chopped
  • cumin, to taste

Steps/Methods:

  1. Place cooked lentils and tomato sauce in a blender.
  2. Add olive oil and red peppers. Blend until almost smooth.
  3. Add garlic and cumin. Continue to blend until smooth.
