Lisa & Joanne's Easy Gourmet Salad

With spunk and crunch, this sunflower seed and flaxseed oil salad is healthy and the perfect blend of greens. Try this tried and true favorite with dinner tonight!

Ingredients:

  • 3 cups of any dark leafy green lettuce (e.g., romaine, spinach, aleor mixed)
  • 1/2 cup sunflower seeds
  • 1 tbsp. extra-virgin cold-pressed olive oil
  • 1 tbsp. garlic-infused flax seed oil
  • 2 tablespoon balsamic vinegar
  • 1/2 teaspoon green nori or other seaweed flakes (optional)
  • 1 teaspoon flax seeds (optional)
  • 1 teaspoon sesame seeds (optional)
  • freshly ground black pepper

Steps/Methods:

  1. Lightly toast sunflower seeds in a toaster oven or in a pan over medium heat on the stove.
  2. Combine oils and vinegar in a glass or small bottle.
  3. Chop lettuce. Place in large bowl.
  4. Pour the dressing over the lettuce. Sprinkle the nori flakes, sesame seeds and flax seeds over the lettuce. Mix well.
  5. Toss the sunflower seeds and pepper on top.
