
This is my rendition of gooey caramel corn without refined sugar and a pound of butter, but it's still tasty! Caramel popcorn reminds me of my Grandma and Christmas!
Ingredients:
- 10 cup popped popcorn
- ½ cup raw honey
- ½ cup brown rice syrup (if you don't this sweetener on hand replace it with honey)
- ½ cup chunky peanut butter
- ¼ teaspoon cinnamon
- 2 teaspoons vanilla
- 2 tablespoons coconut oil
- ½ teaspoon sea salt
- optional: ½ cup roasted peanuts
Steps/Methods:
Mix the honey, peanut butter, brown rice syrup, vanilla, coconut oil, and salt together in a medium sauce pan. Bring the mixture to a boil over medium-high heat and cook for five minutes, stirring the whole time. Take off of the stove and pour over popped popcorn. Mix well. Fold in the roasted peanuts, if using. Set aside the popcorn to let it set up. Once it has set up, you can make it into popcorn balls if you like or just eat it right out of the bowl!
