Peanut Butter Cookie Sandwiches

A quick and easy recipe forthe whole family!

Ingredients:

  • 14 oz butter
  • 1/2 tsp vanilla bean paste
  • 1 – 1/2 cups quick oats
  • 2 tsp baking soda
  • 1/2cup granulated sugar
  • 1 cup brown sugar
  • 3/4cup natural organic peanut butter
  • 2 cups oat flour

Filling:

  • 4 oz butter
  • 1/2cup powdered sugar
  • 1/3 cup peanut butter
  • 1 tsp kosher salt

Steps/Methods:

Melt 6oz butter in a pan, add vanilla paste and oats, and stir until cooked then set aside. Cream remaining butter and baking soda on low. Add sugar and mix on medium speed until pale and fluffy consistency has been achieved. Add peanut butter. Turn off mixer then add oat flour and mix on a low speed. Bake at 350f until golden.

Filling:

Mix on high until incorporated. Then spread over the bottom of each cookie and sandwich together.
