Summer is coming and with that goes grilling season. What better way to get more veggies in your diet then to grill them up with a little bit of oil and spices. These are great on their own, as a side dish, in a salad or on top of pasta. So get grilling today!

Ingredients:

Vegetables of your choice (mixed peppers, zucchini, eggplant, onions, mushrooms, tomatoes)

2 Tbsp Barlean's Butter Flavored Organic Coconut Oil (or Organic Olive Oil)

1 clove chopped garlic

Pinch of Sea Salt and Pepper to taste

Directions:

Cut vegetables into large pieces and feed onto skewers.

Drizzle with oil and sprinkle with garlic, salt, and pepper. If your coconut oil is solid simply putting it by the grill as it is warming up will turn it to liquid.

Heat grill to medium heat.

Grill the skewers for 8-10 minutes until the vegetables soften.

Try not to move the skewers to often so you get nice grill marks on the vegetables. Enjoy.
