Puffins Muffins

For mornings when you don't have time to sit and enjoy your breakfast cereal in a bowl, take a Puffins Muffin with you on the way out the door! Puffins Muffins are a delicious way to start your day or keep yourself going with an afternoon snack.

Ingredients:

  • 1 cup Barbaras Puffins Cereal (Original or Cinnamon), finely crushed (start with about 2 3/4 cups whole cereal)
  • 1/4 cup canola oil or safflower oil
  • 1/4 cup honey
  • 1 egg
  • 1 cup milk or milk substitute
  • 1 1/4 cups unbleached or whole wheat pastry flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. sea salt
  • 1/2 tsp. baking soda
  • 1/2 cup granulated sweetener

Steps/Methods:

  1. Preheat oven to 400 F. Line a 12 cup muffin tin with paper muffin cups.
  2. Mix together flour, baking powder, baking soda andsalt. Add sweetener and crushed Puffins (if desired, add 3/4 cup nuts or raisins).
  3. In separate bowl, mix oil, honey, egg and milk until well blended. Add to dry ingredients, blending with wooden spoon until combined. Do not over mix.
  4. Fill muffin cups to 3/4 full and bake for 18 – 20 minutes.
