Mix all the ingredients except fish.

Cut fish into 2" strips by 1/4" wide.

Cover fish strips with the juice mixture.

refrigerate for at least 3 hours and as much as 24 hours.

The lime juice cooks the fish and it is safe to eat.

1/2 teaspoon sea salt

1 lb sole (or other white fish) or 1 lb flounder ( or other white fish)

1 pinch pepper
