Sloppy Tofu Joes

This summer camp and child-friendly favorite takes on a healthy vegan version when made with tofu. Firm tofu, when crumbled, is similar enough to ground meat that this recipe is great when feeding different diets needs at the same meal.

Ingredients:

  • 1 package Nasoya Extra Firm or Firm Tofu- crumbled
  • 2 tablespoons olive oil
  • 1 medium onion- chopped
  • 1 medium green pepper- chopped
  • 2 cloves garlic- minced
  • 2 tablespoons soy sauce
  • 2 cups tomato sauce
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin powder

Steps/Methods:

Heat olive oil in medium saucepan; add onion, green pepper and garlic. Saut until tender. Add tofu and soy sauce. Continue cooking and stirring until tofu starts to brown. Stir in tomato sauce, chili powder, and cumin powder. Cook 2-3 minutes.

Serve hot over toasted burger buns.
