Ingredients

1 daikon (Asian radish), chopped

1/2 cup organic corn niblets

1/2 cup organic edamame

1 cucumber, chopped

1 small red onion, chopped

1 orange pepper, chopped

3 radishes, chopped

2 celery stalks, chopped

1 bunch green onion, sliced

cilantro, to taste

1/4 cup sun-dried tomatoes in oil

1 tbsp olive oil

1 tbsp apple cider vinegar

2 cloves garlic

2 tsp honey

salt and pepper, to taste

Directions

Chop vegetables and add to a large mixing bowl. In a food processor, add sun-dried tomatoes, olive oil, apple cider vinegar, garlic, honey, salt and pepper and blend until smooth. Pour over veggies and serve.
