Ingredients:
- 2 cups brown rice, rinsed
- 4 cups water
- cup peas (frozen or canned) (optional)
- 1 cup raw peanuts (hulled)
- cup apricots
- cup raisins
- Seaweed (e.g., dulse, nori, kelp), rinsed (optional)
Steps/Methods:
- In a medium saucepan, bring water to a boil.
- Add the rice. Drop in some seaweed. Cover.
- While rice is cooking, lightly roast the peanuts in the oven, a toaster oven, or a pan on the stove. Finely chop the apricots.
- If the peas are frozen, steam or boil until thawed.
