Sweet & Spicy Carrot Soup Recipe

Sweet potatoes: the sweet, satisfying carbohydrate! Along with carrots, these two beautiful root vegetables are an excellent source of beta-carotene which is so important for healthy skin cell turnover, heart health and eye sight. This sweet and spicy carrot soup recipe is a sure way to shake up dinner.

Ingredients:

5 lb. bag of carrots

1 sweet potato

4 celery stalks

1/8 cup chopped ginger

1 medium onion

3-5 cloves of garlic

1 small handful of fresh parsley

¼ cup pine nuts

¼ cup organic black strap molasses

cinnamon powder, to taste

cayenne powder, to taste

1 tsp of olive oil

hemp seeds, as desired

walnuts, as desired

sea salt and pepper, to taste

Directions:

Chop carrots, sweet potato, celery, ginger, onion, garlic and parsley. In a large pot add all of the chopped vegetables and enough water so that they are submerged about ½ cm; boil until tender, about 20-25 minutes. Take off heat and let cool; don’t drain the water. Add pine nuts contents of the pot into a blender and blend until smooth. Once blended, add a few dashes of cinnamon and a dash or two of cayenne powder, along with the molasses; re-heat until warm. Top off with a tsp of olive oil, hemp seeds, walnuts, sea salt and pepper. Enjoy!
