Thai Peanut Grilled Chicken

This is a great warming comfort food dish for winter. Easy to make, it's full of flavor but takes little time to make!

Ingredients:

Thai Peanut Sauce

  • 1 ¼ cups honey roasted peanuts, finely ground in food processor
  • 1 teaspoon minced ginger
  • 1 ½ tablespoon red curry paste
  • 20 ounces coconut milk
  • 1 teaspoon peanut oil
  • ¼ cup fish sauce
  • ¼ cup honey

Chicken

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • ¾ tablespoon salt
  • 1/3 teaspoon pepper

Put ginger in saucepan and sauté on medium heat for 30 seconds. Add curry and stir

with whisk for 15 seconds then whisk the rest of the ingredients except the peanuts in the

sauce pan and simmer for 20 min. Add peanuts and simmer for 10 min more whisking

constantly. Adjust seasoning if you wish and serve.

While sauce is simmering, toss chicken with olive oil, salt and pepper and grill for 7 min

on each side on medium heat or until internal temprature reaches 155f. Take chicken out

of the grill and put into peanut sauce and cook for 8 min longer.

Serve Grilled Chicken with Thai Peanut Sauce alone or with Brown Jasmine Rice.

The rice is gluten free, vegan, vegetarian and egg free.
