Turkey Breast With Barley-Cranberry Stuffing Recipe

Try something new this Holiday season, starting with this barley-based stuffing! With cranberries and almonds, this stuffing is a delicious, healthy, wholegrain alternative to traditional stuffing based on bread, and boxed stuffing which can be full of unhealthy additives.

Ingredients:

2 cups organic chicken broth

1 cup quick-cooking barley

½ cup onions

½ cup dried unsulfured cranberries

2 tbsp slivered almonds

½ tsp sage

½ tsp garlic pepper

1 bone-in organic turkey breast

1/3 cup parsley

Directions:

Combine broth, barley, onion, cranberries, almonds, sage, and garlic pepper in slow cooker. Brown the turkey breast and add to cooker. Cook on low 3-4 hours or until temperature reaches 170ºF. Place turkey breast on a cutting board, cover with foil, and let stand 10-15 minutes before carving. Stir parsley into the stuffing and serve with turkey.
