Zesty Carrots

Carrots are rich in beta-carotene (precursor to vitamin A), which protects eyesight. This recipe is nutritious and delights the tastebuds!

Ingredients:

  • 8 medium carrots
  • 2 tablespoons horseradish
  • 2 tablespoons grated onion
  • cup mayonnaise or vegan mayonnaise (like Nayonnaise)
  • cup water
  • Sea salt and pepper
  • cup bread crumbs (whole grain if possible)

Steps/Methods:

Preheat the oven to 350F. Dice the carrots and steam until tender. Combine carrots with the remaining ingredients in a greased casserole dish. Sprinkle the bread crumbs on top, and bake for 15 minutes.
