Today on Facebook Live we found ourselves in a pretty pickle in the kitchen! It's surprisingly easy to make your own pickles and you can customize based on how sour, sweet, or spicy you'd like them to taste.
Ingredients
Cucumbers (mini) – Enough to fill a jar
For Brine Solution:
Apple cider vinegar
2 tbs large grain Himalayan salt
Dried or Fresh Spices Blend:
Fennel
Pepper
Mustard Seed
Garlic
Coriander
[Optional, but great if you can add it] Fermented probiotic paste
Fresh Herbs:
Coriander
Dill
To make them extra crunchy:
Powdered Coral Calcium
OR fresh oak or bay leaves (3 or 4 for the whole jar)
Directions
- Rinse your jar with boiling water to sterilize.
- Make your brine: Add 1/4 cup of apple cider vinegar and enough salt so that it's saturated (you should have some salt that doesn't dissolve).
- Add whichever spices you prefer to the jar.
- Add cucumbers to fill the jar, packing tightly.
- Add coriander/dill to top.
- [Optional] Add the fermented paste.
- Fill the rest of the jar with purified water.
- Cover and place in the fridge for 3-4 days.
- Note: Be sure to turn the jar over every day to get the spices at the top of the jar.
