Serves 6 to 8

Ingredients  

2 pounds Brussels sprouts, trimmed and halved

2 tablespoons Ellyndale organic extra-virgin olive oil

2 cloves garlic, finely chopped

Large pinch of Himalayan salt

Freshly ground black pepper

1 to 2 tablespoons balsamic vinegar (add more or less to taste)

Directions

Heat oven to 400° F. On a large rimmed baking sheet or in a large casserole dish, toss the Brussels sprouts with the oil, garlic, pinch of salt, and a few grinds of freshly ground pepper. Roast until tender and slightly golden, approximately 25 minutes. Remove from the oven and drizzle with 1 to 2 tablespoons (or more) of balsamic vinegar. Taste and adjust seasoning if necessary.
